"I did not make this overnight, so I skipped the no cook noodles and water portion of the recipe. It was delicious!! I used part ricotta and part cottage cheese. The lemon juice did give it a nice zing. We really enjoyed this! Some artichokes or mushrooms would be a good addition. "

This was a big hit this Thanksgiving. Unfortunately, I underbaked it (even following the time guidelines given) and it was a bit pudding-like in the center. Next time I would really make sure before taking it out of the oven. It is an extremely THICK cheesecake.

I made these in regular muffin tins, so I got 12, but they were very skimpy-looking. Next time, I'll aim for 8, or so, but have them nice and full. The crust was tedious--wonder how just using the cookie would work instead of crumbs/butter? These were quite good, but again, I would make less and have them fuller looking next time.

EXCELLENT RECIPE! Like another review said, we used a can of tomatoes to prepare the rice. Makes a big, hearty pan. We have lots of leftovers for the week. Yum!
