Chili Chicken with Cornmeal Dumplings
"I made this for guests for a football game, and after tasting the original recipe, I decided it was an excellent beginning and began adding my personal touches. I added 1 can diced green chilis and 1Tbsp taco seasoning mix. I served with the grated cheese, diced avacados and lime juice from fresh lime wedges. I put this in a crock pot and cooked on low for several hours( about 4 to 5) then turned to keep-warm. This turned out to be a really good cold weather meal. We finished off the evening with brownies and called it good. Thanks for the recipe."

Southwest Pasta Salad
"I've eaten this salad several times and it just gets better. A can of drained wk corn can be used, and in a pinch, dried cilanatro will work. Since I can't eat pepper jack cheese, I use either sharp cheddar or four cheese Mexican blend. The blend seems to be a bit toned down from the cheddar. If you have to sub, then do so for your own family's taste, of course. No recipes are written in stone; they are, however, great building blocks. Sometimes you get one so good in it's original form, that no changes are called for. That's a good thing! Off my soap box now. I hope anyone else who tries this recipe will enjoy it as much as I do."

Cherry Cola Brownies
"There needs to be more clarity in recipe directions. This is very inconsistent. Whoever is vetting the review contents needs to notify the powers that be that a mistake (or several) has/have been made in directions so that we may have the proper instructions to make what sounded like a super recipe to begin with. And please hurry with the good instructions because I'm a chocoholic and my mouth is absolutely watering for some of this!"

Corn Pocket Rolls
"To zip these rolls up a bit, try adding a teaspoon or so of chili powder, to your taste. They would be a good addition to a Tex-Mex or Southwestern meal, in my opinion."
