"This was some of the best cheese soup I ever had. The beer gives it an excellent edge. I was a little short on cheddar so I subbed some pepperjack since the recipe already had red pepper anyway. Does not reheat well."

"I used this recipe for some perch and bluegill filets and it was great. Be careful not to fry too hot. I used regular cracker crumbs and just added some of my own herbs and garlic. And the olive oil is not as greasy as regular oil."

"For decoration, I top with chopped fresh chives and diced roma tomatoes after baking. I also found that it took longer than 20 min. to bake in a 1 quart casserole."
