Mediterranean Chicken with Rosemary Orzo
"This was a light but flavorful low-fat dinner for me and my husband. I added about a teaspoon of garlic salt and some feta cheese to the dish before eating because it was a little bland for our tastes. I also used whole wheat orzo to improve the nutritional value. I would definitely recommend this dinner as a quick weekday meal for two."

Southwest Tamale Tart
"This tart was a little dry for my taste. I follows the recipe exactly, so perhaps the key might be to add a little more beef broth or some extra cheese. If I make it again (which is not likely) I will also add some green salsa to the black bean/cilantro mixture. If you make this dish, serve it with rice or something moist to offset the consistency of the tart."

Easy Garden Bake (Cooking for 2)
"Delicious! The texture was fluffy but not runny at all and the vegetables cooked perfectly, not too soft or crisp. I highly recommend this recipe for any meal. We paired it with potatoes and vegetarian sausage patties. Next time I will use 1/2 tsp salt instead of 1/4."

Vegetarian Italian Pasta Skillet Dinner
"I can't believe how good this was! I couldn't find meatless sausage crumbles so I bought Morningstar meatless sausage patties instead and just cut them up into small pieces. I also omitted the mushrooms. Even my total carnivore husband liked it. So easy and quick too!"
