Layered Pumpkin Cheesecake
I made this for Thanksgiving this year. Everyone loved it. It was so easy to make. I actually made this in a convection/toaster oven because our turkey was in the big oven. Surprisingly it turned out great. I used a 10 inch springform pan cause I read about overflowing/extra filling.

Chili con Carne
This was pretty good as written, but I'll add more next time. Next time I will add more chili powder, some tomato sauce, and a little jalepeno. Everyone said it was pretty thick. My father said it was missing something? I've added Coriander to chili recipes before, so maybe I'll do that next time, and maybe some bay leaves. I agree- double the recipe! I had family over and my leftovers were one really small bowl. I'm going to make it again today, and double it.

Seven-Layer Bean Dip
This dip was okay. What ruined it for me was that the bean mixture was salty. I don't remember what brand taco seasoning I used, but I'm guessing that was the culprit. Next time I will buy a low sodium taco mix. I made it for a potluck at work. People ate it and said it was good. But for me, with the combination of a tortilla chip- which is usually salty too, it was just too much.

Holiday Lime Cooler Cookies (Cookie Exchange Quantity)
I made these last year around Chirstmas because I was looking for something different- everyone LOVED them. I didn't use lime, I used lemon instead- the zest for the cookies and the juice for the frosting. I didn't use any gel with the frosting either. I just frosted them and let it dry. I had no trouble transporting them or removing them from the baking sheets. They were actually pretty simple. I was surprised to see that people had problems making these.
