"Welcome to the Message Boards! BLT is probably correct that they are popovers. My mother made these and filled them with custard (like a éclair) or we used a savory creme sauce with fish or meat in it."

Chicken Quesadillas
"Welcome to the Message Boards! I just use a large spatula and turn them over. The melted cheese holds Quesadillas together quite well, so as long as you are careful to get the spatula under them to turn them it isn't really as hard as it sounds."
