Apple Oven Pancake
I made this this week end for my family. Since I did not have an iron skillet, I substituted a 10" Corning Ware dish.
It did not come out looking like the above, but like an apple upside down pancake. I served it sprinkled with additional cinnamon and sugar, drizzled with syrup on the cake and the plate. It looked very fancy and "uptown".
It was so wonderfully sweet and spiced perfectly with the cinnamon it probably did not need the syrup. The flavors hit all the right notes.
My elderly mother is difficult to please, but she took one bite and started raving about the flavor. I will make this for her, and the rest of the family often.
