"It's definitely not healthy as it's written, but it is very quick, cheap, and extremely tasty. You can make it less scary by using low fat / low sodium options as far as the milk and soup, and margarine instead of butter - and swap out the four cheese potato flakes for normal ones (the soup really adds enough flavor on its own, and those cheesy flakes are outrageously high in sodium - plus this will save you a little money, too, if you're as careful with your pennies as I am.) I added shredded cheese on top along with the onions (which you could also swap out for a healthier option), and if I make it again, I'll try to add in some protein in the form of beans as suggested. I think this is a special occasion comfort food or potluck sort of dish rather than a regular addition to my menu, but I can definitely recommend giving it a whirl. I think it'll please just about everybody."
