"I have used this method for a number of years now and it works great. I have found if you add dried spices to the brine the spices will also be pulled into the turkey with the brine be sure; to use a lot of spice ( I like using cajun spices to give it that extra kick). Be sure to give the turkey plenty of time in the brine I do it for 24 hours and remember to refrigerate the bird while its in the brine. I understand that the way this method works is the brine pulls out the juice that are in the bird first and then starts to pull the brine back in (that's why adding spices works) but if you do not give the bird at least 12 hours this method can dry out your turkey. Have a great holiday mdw"
