Piña Colada Cupcakes
These cupcakes are FANTASTIC and served as a delicious base to the little extra touches I added. I did leave out the rum extract, and we didn't miss it a bit. Because I loved a filled cupcake, I filled each one with pineapple preserves -- which just put them over the top! YUM!!!! And because I prefer homemade frosting, I whipped up a standard buttercream frosting and added the coconut extract instead of the vanilla. The bottom line is that this is a wonderful recipe that is at the top of my list of favorites. Thanks, Betty Crocker!
