"This may look a little bland, but is super tasty! The spices on the chicken create a nice brown sauce that can be poured over the spinach and the chicken, so this does not all taste like "health food" although it is indeed a healthy meal. I used two huge breasts and pounded them down or they would have taken too long to cook, so I needed at least twice as much seasoning as listed. I also used minced garlic from a jar, so I had more of a wet rub, which I applied to both sides of the chicken before it went in the pan. The tomato slices need to be fairly thin or they won't cook; I threw a few thick slices into the juices in the pan and let them cook that way. "

"Just made this for dinner, and boy is it good! I used diet soda instead of regular, four of the chilis in adobo sauce (if you like heat just use the whole can). The man of the house ate 2.5 huge bowls full it was so good! I bought chorizo sausage that was in a very thick casing, so I pulled that off and just put big chunks of it into the chili; I think smaller chunks would have been better so you get meat in more mouthfuls. Anyway, this is very flavorfull, and just hot enough to make you sweat a bit but not so hot that you can't taste the spices. This one is a keeper for sure, and I'm sure we'll make this quite a bit!!"

"I used a can of diced tomato with chilies instead of the "recommended" organic product, but followed the recipe to the letter otherwise. It was just a tad too spicey due to my substitution, but fantastic otherwise! Will be making this again many times. "

"Loved this! Very easy to make and really tasty! I added twice as much Buffalo sauce to turn up the flavor and the heat, but stuck to the recipe otherwise. Next time will make a double-batch as we finished this off quickly and didn't really have left-overs. "
