Apricot-Glazed Pork Roast and Stuffing
Mine came out good, I made the following changes:
I made stuffing on the side, didn't put it in the slow cooker.
I used apple juice for the balsamic vinegar. Yum :)
I seasoned the roast with rosemary, a tad of sage, thyme.
Next time will try w/ peach.

I've been using this recipe for years, it's always a hit.
I do read the other reviews, and appreciate everyone sharing diabetic recipes, etc -- since I've reached an..older..age ;)
