Cajun Chicken and Rice
I made this dish today with very large, thick, boneless breasts. Had to cook for an hour and 10 minutes. My only complaint was the green peppers were still a little crunchy and the dish was still a little watery. But the overall taste was delicious! A definite keeper!

I have made this recipe several times and find it very tasty. (I use chilled leftovers as salad toppers) However, I too, find that the breading falls off during frying. I'm wondering if baking, for whatever reason, keeps the breading in place better?

Shanghai Chicken and Noodles
I made this and thought it was very dry (and I used almost half a bottle of hoisin sauce). Did not have a whole lot of taste. Don't think I'll be making this again.

Hungarian Swiss Steak
I thought this was very flavorful, but after following all the cooking directions and simmering about 20 minutes, the steak was still rather tough. I think the previous reviewer has the right idea.....simmering 45 minutes. I will try that next time.
