Carnivore’s Meat Loaf
I altered this slighty based on what I had on hand and it was fantastic. My husband LOVED it. I used 1# of 85/15 ground beef and 1/2# fresh ground pork, omitting the veal. Sauteed the onions in bacon grease but omitted the bacon at the end. Otherwise added all ingredients as specified. The sauce is so good I will double the recipe next time and heat half in a saucepan for use at the table. I didn't have a broiler pan so foil lined a rectangle glass pan. Reduced pre-sauce cooking time by 10 min and after saucing top cooked additional 12 min. Total cook time 1 Hr 10 Min. This made a flavorful, moist meat loaf. Added mashed potatoes and corn on the cob. Definitely a keeper.
