Grilled Smoky Cheddar Potatoes Packs
"This recipe was GREAT!! I made these while we were out camping. I pre-made them in the morning and it saved a lot of time. I did take some of the advice from previous reviews and added some things. I did spray the foil (a must). I used real bacon and under cooked it so it can cook in the packet. This added a lot of flavor. I added green & red peppers, pepper and garlic. I added a few chopped chives to the packet and added the rest with the cheese 5 minutes prior to it being done cooking (following others review). I did put all the ingredients in a bowl and mixed it with some olive oil (just to coat). I then added chunks of butter on the foil and poured the mixture on top. The butter helped with keeping it from burning on the bottom. We did have a crispy bottom, but it was not burnt. Our camping group raved on how great these potatoes were and would like me to make them again. They do taste good as left overs. I will definately be making this one again."

Southwest Chicken Skillet
"We really enjoyed this recipie. It was easy and not time consuming. I added some ingredients and the flavor was wonderful. I used olive oil instead of vegetable oil. I used fresh red & green peppers, mushrooms and garlic. I added my homemade taco seasoning (no salt) for a zippy flavor. I used a somewhat mild (listed on label) salsa which was somewhat spicy. The toasted tortilla's added a nice cruchy texture. Not much was left over. I will be making this one again."

The fresh cilantro gave it a good taste. We decided not to toast the wheat tortilla's, so we had them taco style. I served with some spinach and cheese on the side. I heated some black beans on the side to add to the dish if anyone wanted them. I was told this dinner was great. Not much was left over. I will be making this again."

Lemon Pepper Tuna with Orzo
"This tuna salad was great. I used wheat elbow macaroni instead of orzo. I did add more to this salad to make it zestier. I added more Lemon peper than what was suggested and I added dried dill. If I make this again I would add peas, more tuna, and let the salad sit overnight. The flavor was much better the second day. It was a good summer pasta salad and easy to make. It was a hit."

Grilled Pesto Chicken Packs
"Recipe was quick and easy. I used store bought pesto which was not very good. I am going to try this agian with fresh home made basil. Hopfully homemade pesto will add more flavor. I also added mushrooms and green/red bell peppers."

Italian Sausage Lasagna

This lasanga was great. It was a good starting point for me; I added a lot to this one. I used ground itialian venison for the meat. I added mushrooms, green peppers, and chopped pepperoni to the tomatoe sauce (and meat). I added spinach to the ricotta mixture. I pretty much doubled the meat, tomatos (and sauce) and cheese. I had a very small amount of left overs to make a very small pan which I vacuume sealed and froze for a later date. Everyone loved it and were suprised on how full they were after eating one piece.

Two-Cheese and Rosemary Mashed Potato Casserole
Rating:
This was a great recipie. Cooked them for Mother's Day Dinner and everyone loved them. The only comment I received from everyone was to next time add more cheese to the mixture.
