Creamy Scallops with Angel Hair Pasta
You can use evaporated milk. I use it alot in place of cream in recipes like this. if you were to just use skim milk I'd think you'd have to add some cornstarch to thicken the sauce up.

Buffalo Chicken and Potatoes
This was REALLY good. I even forgot to put cheddar into the potatoes! so I topped the casserole with it at the end and let it melt. I did marinate my chicken overnight in Franks Hot Buffalo Wing Sauce - it was nice and spicy. Instead of cornflake crumbs I crumbled up some Cheesit duo's - the ones that are sharp cheddar and parmesan. YUMMY!!! Oh and another thing I did was let the potatoes (O'Brien kind) thaw in the fridge overnight and then dried them on a kitchen towell to get all the extra moisture out. Great consistency.

Slow Cooker Beef Stroganoff
This was pretty good - definitely easy but I wouldn't make it again. The beef gets all shreddy instead of nice firm bites of meat. But what did I expect for sitting in a crock pot all day? My DH said he prefers the regular beef stroganoff. But for ease of prep it's great!

Pork Sausage Apple Loaf
this was delicious. My boyfriend could have done without the craisins but I really like them. I know this is a Bisquick recipe but I used refrigerated pizza dough - it was just a lot easier. I also cooked the sausage mixture the day before I used it so it would be a quick throw-together for breakfast on Sunday morning. Perfect!! Oh and I had some fresh mozzerella so I chuncked that up in the sausage mixture and then topped the sausage with some baby swiss before cooking.

YUM - I love chicken enchiladas and I'm always looking at different recipes. This one is really good - my daughter and her best friend (both 16 and quite skinny minnies) had 2 helpings they liked it so much :) - I will definitely make these again - I need to find a spicier enchilada sauce though, or make it myself.

Meatballs and Creamy Rice Skillet Supper
this was really good, easy and quick. I used turkey meatballs because my daughter doesn't eat any animal with 4 legs LOL ...
I used chicken broth in place of the water and threw in a bag of seasoned california blend veggies instead of just the carrots. My daughter even had seconds!!

Picnic Chicken Loaf
I made this to take an outdoor concert and it traveled well. It has such great flavors and the crunch of the apple is wonderful. Make sure you get a mild brie though, because the brie I purchased was a little strong for some people. I did use Deli sliced roast chicken instead of the rotisserie chicken. My boyfriend loved it though so that's really all that matters!! *grin*
