Arroz con Pollo
I will make tonight but will substitute yellow rice instead of white. Yellow rice is rice with saffron flavoring. And will probably use a frozen mixed vegetable (carrots, peas etc) instead of peas alone. undecided about the salsa because yellow rice is so flavorful. maybe add just a little to add a little kick...update ya later to see how it turns out.

Potato, Broccoli and Sausage Skillet
This dish was awesome! But I tweeked it a bit. Instead of sausage I used boneless chicken breast.(four sliced and diced And I seasoned it lightly). I also used California blend veggies (broccoli, cauliflower, carrots). I doubled on the potatoes to feed a family of four. Had a some left over for the next night. And I added a little Colby Jack cheese towards the end before serving. My family LOVED IT! Delish!

Gluten Free Skillet Chicken Divan
tried the recipe for the first time...delic! But I changed a thing or two. Instead of cooking chicken two minutes on each side I cooked longer to ensure it was done at completion of rice. Also before cooking I lightly seasoned my chicken. Instead of frozen broccoli I used a frozen california medley. And finally instead topping with cheese I made a cheese sauce with cream colby jack and dijon mustard salt and pepper to taste. Pour over chicken and rice before serving....yum!

Fiesta Chicken Lasagna
absolutely delicious! i made a change or two. instead of southwest chicken i used the oven roasted and seasoned myself salt pepper and cumin, minced onion and garlic. i used santa fe salsa with corn tomatoes and beans. has a little kick to it. i still added black beans as instructed. my family loved! and it was ready in no time! and we had texas toast on the side.
