I love the idea of creating my own pizza from scratch, so I tried this but the crust came out TOO soft and flaky--you want a pizza crust to be a LITTLE bit chewy, otherwise it just falls apart, like mine did. So next time I'm going to try KariGodwin's method of adding a bit of olive oil and then letting the dough rise for a few minutes; I'll probably give it a few more licks with the spoon and/or knead it a few times to stiffen it up just a tad. Because it sounds like a great way to make a homemade pizza; we can't stand the frozen kind and delivery is a once-in-a-while luxury.
