Cheesy au Gratin Potatoes
I usually make boxed au Gratin potatoes, but russet potatoes were WAY on sale, so I had 10 lbs and needed recipes. I cooked these potatoes up for my family and my father-in-law and served them with pork tenderloin and steamed asparagus. They were a hit (actually, the whole dinner was)! We have made them a couple of times since then, and they always go over well. I will probably not go back to the boxed kind. The best part is that we almost always have the ingredients on hand!

Grilled Sweet and Sour Chicken Packs
I grilled these packets up last night for my family, and they were delicious! Like others have suggested, we served them over rice. The only thing I will do differently next time is to warm up some extra sweet & sour sauce to pour over the chicken & rice just before serving. I might also try marinating the chicken before grilling it. Our new grill has a burner on it, so the entire dinner was cooked outside, which kept the house cooler. There weren't many dishes, either, which is always a plus! Bottome line: Easy to prepare and delicious to eat!
