Slow Cooker Italian Tortellini Stew
"I have it cooking as I type this. Since I love garlic and oregano and basil, I am using all 3. There is no way I could make this without garlic, and added it at the start. But the basil is from my herb garden, not dried, and I'm adding it in when there is about 1 hour to go, not 20 min. The same with the oregano. I want a lot of that flavor in it. I added our home-grown green pepper, as well, with a bit less zucchini (also from our garden). Smells wonderful! Can't wait to eat it! Having it with ciabatta bread I got on sale."

Spaghetti with Zucchini and Beans
"Given the fact that I did not have all the ingredients for this recipe, I substituted some and it still turned out great! This will be one I will be making again. I didn't have feta cheese, so used parmesan/romano combo. I didn't have northern beans so used light red kidney beans. Didn't have tomato paste so used spaghetti sauce and no water. I added chopped sweet red pepper. Next time I will make it with the correct ingredients. Oh, I also added basil from my garden. Good, delicious, nutritious, vegetarian recipe."

Chick Pea and Tomato Curry
"This tastes wonderful! And is easy. However, my husband and my "senior bodies" could not deal with that much curry, nor is it our taste to have it that spicy so in the half recipe I made (cut the recipe in half) I used a heaping teaspoon. It turned out perfect for us and we loved it. I had this over whole grain rotini pasta, since that is what I had on hand. I added a bit of our homegrown chopped green pepper to it as well."

Easy Italian Vegetable Soup
"Very disappointed in this recipe. I heeded other's comments about it not having enough liquid, so I added canned tomatoes with juice and more then they recommend, plus some extra water. It was still too thick. It was too bland tasting for us as well. I doubt I'll make it ever again, but if I did, I'd add some spices, garlic, etc. Did not care for the flavor. "

Eggnog Spritz Cookies
"While these are really tasty cookies, there are some things about the recipe that are way off. Adding 1/2 cup of flour was WAAAY too much and the dough was so dry and crumbly I had to add milk for more mosture. Next time I will cut the flour down to 1/4 cup. The icing with only 1-1/2 tsps milk added was far too thick. I had to add much more, to come close to making it able to drizzle. After doing both of these, they turned out perfect. So warning about the amount of flour and milk!"

Smoky Mac 'n Cheese
Rating:
This was very good! I didn't have smokey cheddar so I used sharp regular and added a few drops of liquid smoke instead, which worked wonderfully! I used Half and Half instead of whipping cream for lower fat and calories...and was what I had on hand. Other then that, I did it the same and it was so tasty. I'll definitely make it again.

Southwestern Chicken Layered Salad
Rating:
Really great recipe to use leftovers. I didn't have enough chicken so I added leftover cooked smoked sausage cut in small chunks along with the chicken. Then I added some chopped green and red pepper as well when I cooked the meat with the taco seasoning. I also added chopped cucumber to the lettuce. It was sooooooo yummy!

I have made this recipe for many years but I add preserves to it in dollops and sometimes drizzle a more liquid icing over it. Is tops.
