I'm a writer, graphic designer and candlemaker from the suburbs of Philadelphia. When my kitchen counters aren't completely covered in wax, I love cooking and baking, especially healthy foods and treats!
About
ckelley116
If you could only have one food for the rest of your life, which would you choose:
Lump crabmeat, in any way, shape or form.
What is your favorite recipe to make:
I love making different varieties of pizza. My newest favorite is a Thai Chicken pizza that I came up with when I had basil that was starting to wilt and a half-empty bottle of Sriracha.
Which kitchen appliance can’t you live without:
My toaster oven.
If you could invite 3 people to a dinner party – living or dead – who would you pick:
David Bowie, Anne Boleyn and Robert Pattinson.
What is your favorite meal from your childhood:
My mother's chicken cutlets with RIce-A-Roni.
How do you like your eggs:
I actually loathe eggs. So I guess I prefer them baked into cakes and cookies? That's the only way I can eat them.
What is your favorite red-colored food or dessert:
Raspberry sauce...drizzled over cheesecake, anything chocolate, just on a spoon...yum.

"This is totally my go-to mix for chocolate cakes - and there are so many ways to dress it up! It's a hit every time. I have a hard time believing that the review from "mattgg" is a real one - who actually assumes that a box would contain the eggs, oil, and frosting necessary to make a cake?"

Rosemary Batter Bread
"Great recipe! I love making bread but all that kneading can get monotonous, so I was happy to find a great bread recipe that did the work on its own. This bread is also great if you sub the rosemary for about a tablespoon of dried Italian seasoning and 2-3 cloves of minced garlic, stirred right into the batter...makes a delicious garlic-herb bread that's perfect with some spaghetti or soup!"

Grilled Beer-Brined Chicken
"To the salt police - if you haven't made a recipe, yet rated it one or two spoons simply to complain about it, you need more productive things to do with your time. Hobbies are good. Read a book or take a walk. I, personally, found this recipe delicious. It's great for a once-in-a-while treat and a great way to liven up boring old chicken."

Sage and Garlic Grilled Chicken Breasts
"Don't understand why the rating is only 3.5 stars; this chicken was great! Lots of flavor, juicy and versatile. Also, if you've got any leftovers, it makes an amazing soup with homemade chicken stock and orzo!"

Spumoni Chunk Cookies
Rating:
These cookies are amazing! I made a batch on Friday night and between my husband and myself, they were gone by Monday morning. Definitely making these again, maybe even adding them to my Christmas cookie rotation. Nanadean - I found dry-roasted unshelled pistachios at Trader Joe's. They were unsalted, but the cookies still turned out perfect and delicious. On that note, I don't really think it's fair to give the recipe a mediocre rating just because you can't find the nuts. There are plenty of outlets on the web where you can find an answer to that question without bringing the whole rating down.

Light Lemon-Sesame Chicken
Rating:
This was amazing! Better than take-out Sesame Chicken, and the lemon sauce was the perfect touch. Served it with gingered baby carrots and sesame green beans and it was TO DIE FOR! I might make it again next week...maybe even with shrimp instead of chicken.

Herb Roasted Root Vegetables
Rating:
I made almost this exact same recipe for Christmas dinner...imagine my surprise to find it here! This whole time I thought it was my own brilliant idea ;-) My version used red potatoes instead of turnips and fresh thyme instead of Italian seasoning. It got rave reviews and I'm sure this one would too - the next time I'm in the mood for roasted root veggies I will definitely try this slightly-altered version.

Lemon Cookies
Rating:
I LOVE LOVE LOVE making cookies from cake mix - it's one of the first recipes I ever tried baking as a little kid. Lemon is always a great choice. Back when cherry chip cake mix was somewhat easy to find (ahh, the good old days!) I used to love using that with a dash of almond extract. Delicious :) Orange is also one of my favorites, or dark chocolate with some raspberry extract. You can play to your heart's content!

Savory Meat Loaf (
lighter recipe
)
Rating:
This is great! It's so nice to find a meatloaf recipe that isn't full of a bunch of vegetables - that's why they call it MEATloaf! Put your veggies on the side! I omitted the onions out of dietary necessity, but I did add a pinch of onion powder because I enjoy the flavor. My husband and I loved it and it made great sandwiches the next day.

Reduced-Fat Chicken Pot Pie
Rating:
Amazing recipe! I roasted 2 boneless skinless chicken breasts with a roasting rub I had on hand (a mix of Herbs de Provence, salt, pepper and garlic). I used Cream of Chicken with Herbs soup and threw in some more fresh-ground black pepper. It was perfect! So flavorful and filling for a low fat meal :)
