Sweet Potato Hummus
Very tasty! I've made this three times now and everyone loves it. Has a great combo of flavors; for the paprika I used a mix of smoky & sweet (from Penzeys). Great to make ahead for summer picnics, etc.

Game-Day Black Bean Hummus
Made this for a party and everyone loved it. Better if you can make the hummus one day ahead, flavors meld well overnight. I live in AZ so we have a great Mexican market where I got homemade pico de gallo, Mexican crema (better than sour cream) and a ripe avocado to serve on top. Served with pita chips and tortilla chips.

California Cheeseburger Pie
I made this to take to my parents house, so I cooked it at my house first. OMG--if you love cheeseburgers, this is the recipe for you! It really does taste like a cheeseburger, just perfect. I did add extra pickles and my Mom still wanted more. The best part was my car smelled like In-N-Out Burger with the pie. We served it with sweet potato fries--fantastic!

Double-Chocolate Rocky Road Cookie Bars
Made these for the family and they LOVED them. I did add a few more miniature marshmallows to cover the second layer, probably another 1/4 c. Last but not least, I replaced the pecans with almonds, as Rocky Road ice cream has almonds. Immediately jumped to the top of the cookie wish list.

Grasshopper Fudge Cake
Changes--One jar of fudge sauce instead of two and creme de menthe in the green cake batter and in the cool whip instead of mint extract. Got rave reviews for our early St. Paddy's Day dinner last night. Agree with recent poster who said you have to use mint, NOT peppermint extract/flavoring. Otherwise it's a winner, would be a great springtime cake or for anyone who likes mint or chocolate.

Slow-Cooker Reuben Sandwiches
Made this for early St. Patty's Day dinner, everyone loved it. Would definitely recommend a larger cut of corned beef -- say at least 4 lbs. The one I bought was 3.11 lbs and it made six sandwiches with left-over sauerkraut, but no corned beef. One thing you can't do is over cook corned beef so I added some extra water and cooked it for about 15.5 hours total on LOW. Will make it again for fall, it's yummy!

Grilled Chicken with Chipotle-Peach Glaze
Couldn't find peach preserves (went to two stores) so I used apricot preserves instead. It was wonderful and I got raves for dinner. Will definitely make this one again.

Slow-Cooker Spicy Chicken in Peanut Sauce
Based on the previous reviews, I cut the cinnamon in half and doubled the amount of peanut butter. Also, I don't have really large crock pot, I cooked it on the stove in a dutch oven on low for about 4 hours. I shared it with some friends and they loved it and have asked for the recipe. Will definitely make again.

Spinach Salad with Cranberry Vinaigrette
Made the dressing in the morning, so the flavors had time to meld. This was a hit, plus it makes a great presentation. Had enough to do salads the next day, since we served it for a dinner party for five.
