Southwest Chicken Ranch Pasta Salad
I made this as a quick throw together for a bbq. I used rotisserie chicken from the deli though, and just cut up the breast meat. Instead of using cheese, I diced up some avacado and put it in, since there would be kids eating it, i didnt really want any spice. It was a very good salad, everyone enjoyed it and it was super and quick easy to make. I would definitely make this again.

Lemon Cake with Raspberry Mousse
This cake was awesome!! Made it for a birthday for someone who loves reaspberry/citrus combo. Everyone loved it!! Very moist cake and light topping in the mousse. My recommedation would be to add the lemon zest after youve mixed the cake mix if you are using an electric mixer, a lot of my zest got stuck to the beaters. So mext time I will fold it in after mixing. Also take the time to make the mousse, it only takes a couple mins to whip the cream, and its SOOOO much better than cool whip, cool whip tastes so fake!! All in all, wonderful cake, recomment to those who like lemon cake for sure.

I too have been making this cake for years. I had actually found the recipe on a cooking website and they call it "s*x in a pan." We like to use the almond snickers on top, or plain snickers, but i think i would like to try some of the others that were suggested :) They also suggest using a straw to poke the holes in the top and I think that would be much easier than a wooden spoon.
