"Very tasty recipe. I especially like it served on Boston lettuce. My family doesn't like the taste of potato skins, so I simply peel larger red potatoes and cut them into chunks. I agree that it needs salt and pepper."

"This is definitely a keeper for a quick, delicious summer supper. My entire family likes it. For a more exotic version, sometimes I add fresh pineapple pieces instead of the mandarin oranges, toss in a handful of unsweetened shredded coconut, and macadamia nuts instead of peanuts. Shrimp worked nicely instead of chicken, but this as a totally different recipe, The original one is terrific just the way it is. "

"This is a wonderful recipe that will bring ooohs and aaahs whenever you make it. It is so simple, but looks so pretty. It is also delicious. The lemon curd is a nice surprise. I brought it to a tea sponsored by our garden club and they all disappeared immediately. Although you can use jarred lemon curd, making it from scratch is easy and the taste of homemade really makes a big difference."
