P B and J Strips
Lots of compliments on this one. Very unique flavor for a cookie. I used grape jelly, but you can add any flavor you'd prefer. After i took the raw dough out of the bowl to roll, i thought it was too dry and was fearful the cookie would just crumble in the oven. But, the cookie strips came out perfect. Easy to recommend this recipe. Easy to make.

Lemon Bread Pudding
If you like lemon flavor, this is a good one. Delicious...not overly sweet. I found the recipe easy to make. The only variation I used was cubed italian bread instead of french (store was out of french). Good hot or cold. The only confusing part was what to do with the extra "mix" once you use all of the bread cubes. I decided not to add/pour it over the top layer of bread cubes. It didn't come out dry, so I'm guessing I did the right thing...although I will make this again and perhaps pour some of it over the top before baking. The lemon whip topping was easy and capped a nice dessert.

Taco Beef Bake with Cheddar Biscuit Topping
I prepared this for my family tonight. Relatively easy to do. I followed the recipe, but also added about 3/4 cup of canned black beans and a 1/4 cup of flaxseed meal. I've been "smuggling" flax seed meal into everything I can recently after reading about the numerous benefits. Flax seed meal is an outstanding source for omega-3, fiber, and has ligans which are an incredibly powerful anti-oxidant. With all the flavors in this recipe, the flaxseed meal was undetectable. Me, my wife, and my aunt thought the dish was incredible. The kids didn't care for it, but I knew going into it that it would be a stretch as they don't care for the taco scene (they are 8 & 5). I didn't have the low sodium taco seasoning so I was fearful it might taste too salty, but it was fine. If you have taco lovers, this one is a good move.
