"When I saw this recipe in this article I was floored to see it in print. I was a caterer for 10 years and I've made this dish in my business for many years. It has always been a crowd pleaser and since it is vegetarian can be paired with any meat entrees on a buffet. Using peas and zucchini in stewed tomatoes was a lovely side sauce I made for people who wanted extra sauce or were vegetarians to enhance their meal."

"I love the pairing of the acorn squash with the chicken. I think the reviewer that loosened the skin and put butter under the breast is a good idea. May I add mixing the butter with the rosemary. I would also add slices of orange in the cavity and cinnamon on the acorn squash."
