Mixed Roasted Vegetables
"This is now my go-to method for roasting mixed veggies. It's an excellent way to use up any fresh vegetables you may have left in your fridge - throw them all in! I make mine without the vinegar for a more hearty, less acrid taste, and sometimes throw a little garlic powder in too. A+!"

Hearty Lentil Soup
"Made a regular and veggie batch of this - substituted No-Chicken broth and potatoes for the sausage - was excellent. Doubling is a good idea. Most crock pot recipes use 4-6 cups of liquid, so this soup will make considerably less than you may be used to. PS - pumpernickel was a great suggestion - awesome together!"

I made this with vegetable broth instead of water, and it turned out pretty good! Had to add salt too. Next time I will add some Italian seasoning to add even a little more flavor. I imagine it would turn out pretty bland if made as directed. It's nice to have a recipe to turn to that you can make out of items already in your pantry, though.
