Oven-Fried Chicken Tenders
This is actually a really good diabetic recipe. My father is diabetic and I saw this same recipe (with out the flour) in a diabetic cook book. They had Dijon Mustard and Vege. Oil for the wet mixture and parmesean and panko (or regular) break crumbs for the dry mix. and then the baking was the same. It's his fav. recipe and asks me to make it all the time.
