Grilled Margarita Chicken
I added a bit more garlic (used already minced garlic) and lime juice, and used sugar free margarita mix. Also, instead of doing a whole chicken, I used boneless, skinless thighs (our family's favorite). They came out so AWESOME! I did not baste while grilling as I thought using the raw chicken marinade might contaminate the cooked chicken. This is sooooo good. Very light and refreshing. Will make again!

This cake is totally awesome! I made it for my sister's birthday and she went home, empty handed, since my family loved the cake so much. Next time, I would probably use more lime peel, and maybe heat the margarita mix until it is a syrup, so that it is concentrated, with a more distinct flavor. The pretzel crust was a little bit soggy. You have to try this cake, as even my picky eaters went back for thirds and fourths!

Impossibly Easy Seafood Pie
This pie was so awesome! I did not have any pimentos, but I did have celery and green pepper, so I used those instead. With the imitation krab meat, I added about a teaspoon of garlic (a must have in any recipe), and I also added a squirt of lemon juice. I can''t believe how many rave reviews I got over this simple dish! Already, I am counting the days until I can make it again, haha. Maybe this time with lower fat or fat free ingredients. YUMMY!!!
