Dijon-Parmesan Chicken Breasts
This is fantastic on potatoes. I like to just rough chop potatoes into cubes then season them this way and roast in the over. It's awesome. I sometimes use the bread crombs and sometimes dont. Soo good.

Salisbury Steak with Mushroom Gravy
This was awesome!!!!! I didn't have any beef gravy so I made a quick substitution...beef broth with a little French onion soup mix...then mixed some corn flower and water together to make a quick spurt then mixed it with the beef and presto...beef gravy. Sooo good!!! I will definitely make it again.

Cheesy Chicken Casserole
This recipe is AWESOME!!! I loved it, but did make a few changes just because I didn't have all the ingredients on hand.
1. I used mixed frozen vegetables - thawed and drained. It was just as good.
2. I added fresh broccoli - because that was what I had and my crowd likes broccoli. They loved it so next time I probably will make it with just as the recipe says.
3. I modified the sauce to be a combo of 3/4 -1 cup of Cheddar cheese sauce (see recipe below) and 1 cup of Classico Roasted Garlic Alfredo. This made a great sauce that was still cheesy but not overpowering. I was a little nervous at first that this would not taste too good but when it baked up it was awesome. Just the right combo.
4. I didn't have any parmesan so I used a little left over cheddar cheese in my bisquick topping. It really tied in all the flavors and was AWESOME!!! Also I used real sweet cream butter and it added a really nice (albeit fattening) comfort food kind of flavor to the topping.
My 2 year olds loved the topping and the broccoli - we are working on expanding our tastes but I was happy they were willing to try it, and even happier when they made my husband and I fish through the rest of the dish lookng for more broccoli.
My parents were over too and loved it so much that my mom made me print out the recipe right there.
Here is the cheese sauce recipe I used instead:
2 1/2 cups milk, divided
2 tablespoons cornstarch
2 cups shredded Colby longhorn cheese
1/2 teaspoon garlic salt
1/8 teaspoon ground pepper
1.In a small bowl combine 1/2 cup milk with cornstarch; mix well and set aside.
2.In a medium saucepan over low heat, combine cheese with 2 cups milk and melt. Stir in garlic salt, pepper. To the melted cheese add the cornstarch mixture and stir well.

Chicken Enchilada Casserole
This is easy to make and I tend to have all ingredients on hand. I skipped the bell pepper since I didn't have it but saw that someone else did onions so I did that. I tasted this in all stages as I cooked it and each stage it tasted better than the last. Finally when I added the cream cheese I was astounded at how it really blended all the flavors together and gave it a great comfort food feeling.
I did at alot more rice than what the recipe called for - about 3/4 cup, I dont' like runny casseroles so I think this is a good balance. Also I used 2 chicken breasts. This makes alot more than 3 servings. The big test will be if my children eat it. Either way I will make it again - it smells great and looks awesome.

Pan-Seared Tilapia with Lemon-Butter Sauce
This was awesome!!! I didn't make it with fish though I just made the sauce and put it over shake and bake chicken and it was still great. Also I didn't have any heavy cream on hand so I used 2% milk and (maybe)1-1 1/2 tablespoons of cream cheese. I got nervous at first when I added the milk and cream cheese as it looked like it curdled, but once it boiled everything came together really well. I was really pleased and can't wait to use this sauce to impress friends and family. Also I added just a touch of dill - I did this after I tasted it - either way it was great but I liked the bit of color it added and just that punch of extra flavor.

Quick Cheeseburger Bake
This was a great recipe. It was easy and quick - which is something that I really liked. I did make a few modifications: I added about a 1/2 cup more vegetables and it seemed really good - not to much but not to little. Also I did not have any cream of cheddar soup so I used cream of mushroom soup and it tasted great too - probably just not as cheesy. Otherwise it came together and cooked exactly like the directions said. Additionally it looked like it's picture. Next time I will try the cream of cheddar soup to give it the extra cheesey flavor that maybe I missed.
IT's biggest plus was that my 2 year olds (who have been more picky lately) ate 2 medium size cut squares of this. I love it when I find somthing that they will eat and it has meat and veggies in it so I know they got a good meal.

Beef Bake with Garlic-Potato Dumplings
This receipe was GREAT!! Not only was it easy and quick to make but I have most of the ingredients on hand in my pantry at all times - making this a great go to receipe. Also it not only tasted good to me but my husband had seconds - a sure sign that it's a keeper - but also my 13 month old twins ate it up. I highly recommend this receipe to all.
