Thai-Style Coconut Chicken
"This was just alright for me. My fiancé loved it though. We both thought it was a little too soupy. I might try it again with a smaller can or less amount of coconut milk. Used more veggies so I didnt feel as guilt using the regular coconut milk. Used 3 small red chilies given to us by a family member so I'm not sure what kind but that was perfect! "

Nacho Skillet Casserole
"This was just okay for us. Similar to other reviews I added a little sour cream, chili powder, and olives. I also threw in some hot sauce, we like it hot! More than enough for the two of us with some extra for the next day, which is never a bad thing!"

Chicken Chili with Cornbread Dumplings
"This recipe is a keeper. I'm giving it 4 spoons as it did need some tweaking. I added sone seasonings to the chicken while I cooked it seperately. I also added lots more chili powder as we like it spicy and some garlic salt. Also as a time saver I cooked up some biscuits in the oven and topped the chili with them. Thought it would be good with some paprika as well next time. Very quick which is a plus especially if you cook the chicken up the night before."

Beef Tortilla Casserole
"Not sure if it was because I used some of my own left over enchilada sauce, which tasted great on regular enchiladas, or what but we did not really enjoy this. Kind of felt like it was a waste of a lot of good ingredients I could use on something else. It just tasted weird, the tortillas were soggy and I didn't feel like the cilantro or olives on top were much help either. Didn't even eat the leftovers of this one. :("

Slow Cooker Thai Chicken
"I have to admit, looked weird while making the sauce before it was cooked. I added probably a cup to a cup and a half of chicken broth in the slow cooker-just enough so that the chicken with sauce on top was covered so it wouldn't become crusty on top. After I came home it seemed like it might need some veggies, I had half a bag of 'santa fe' style veggies (red bell pepper, corn, black beans, broccoli) in the freezer and threw them in. Totally worked. Because of the extra veggies I'm going to do slightly more pb, salsa and soy sauce next time. But this is a keeper! "

This was just alright for me. My fiancé loved it though. We both thought it was a little too soupy. I might try it again with a smaller can or less amount of coconut milk. Recipe is perfect as is! Definitely a keeper! I was worried about how juicy the meat mix was and if the corn bread would cook through but all was well and delicious!
