Dried Fruit and Cinnamon Batter Bread
Just tried this. It was surprisingly soft and sweet enough. Did not try with the glaze. (I halved the recipe as we are a small family) The batter was quite liquid, almost like a cake batter, not a dough. The thing I did differently was, I let it proof for more than 1 hour, maybe about 2 or 3 hours. Proof again just before baking time. I used normal plain flour, I baked for 35 minutes, knowing my oven will over-bake.
