Scallops with Artichokes and Tomatoes
I made this as a weekday meal. It took no time at all and tasted great. I added a tablespoon of dill and thickened the juices with a little cornstarch. I served it over pasta and it was just delicious. Even the kids liked it. It is so colorful and the flavors all blend together beautifully. Quick, tasty, easy to make and everyone in the family eats it. What more can you ask for!

Chocolate-Cherry Ice-Cream Cake
I made this recipe for a birthday celebration for a fellow collegue. I used chocolate and vanilla ice cream instead of the cherry, all vanilla ice cream and other various flavors depending on personal taste. Everyone raved about it. Now, I have to make it for every birthday at work! I made two this weekend for upcoming birthdays and froze them. They are so easy to make and taste better than anything you can buy in the freezer section of your grocery store. One of the best recipes!
