"I made these cakes and brought them to a going away party. They were absolutely delicious and everyone demanded both the recipe and the leftovers. I will definitely make again but will try a couple of tweaks. First, I will use 10 pans, not 9, if making the cakes for gifts or two Bundt pans to serve as dessert. Using 9 pans, the cakes were too rounded on top so the icing ran off without absorbing. Second, the icing was too watery. I ended up adding a lot of confectioner's sugar to the reserved icing to make it more of an icing than a glaze. I used Irish whiskey but will probably also try rum...maybe flavored rum."

"Very forgiving recipe! I was out of ground mustard AND didn't have enough cheddar cheese. I also put in too much flour. In fact, I don't think I did too much at all correctly. :) But, with some chunks of cream cheese, some string cheese, a little extra Worcestershire sauce, some extra milk...delicious! A million percent better than anything out of a box. "

"Could not be easier and my family and guests said best corned beef ever. I reduced the amount of red pepper flakes substantially to keep the spiciness down. The onions were out of this world, with a hint of bite from the pepper flakes. I did not make the sour cream mixture to keep the fat count down. (I'll be making this again soon and will try the sauce.) I tried what another poster suggested and boiled the potatoes and carrots with the seasonings from the corned beef in the water - absolutely phenomenal flavor. YUM!!!"
