Chick Pea and Tomato Curry This was a really delicious meal and my first time cooking with fresh ginger. My boyfriend, a hardcore carnivore, really loved it and didn't seem to care that it was meatless. I added a bit of extra ginger and a drained can of diced potatoes to make it heartier. I've already made this one multiple times and will keep in my arsenal for when vegetarian friends come by for dinner.
