Healthified Beef Enchilada Pie
"This recipe is great! It is easy to adapt, too. I used ground turkey, Ro-tel tomatoes, whole wheat tortillas, and added sliced jalapenos and black olives to the top layer. Then I topped it off with sour cream when it came out of the oven. I used a glass deep dish pie pan and cooked it for 25 minutes. A bit of advice: this dish needs to rest for about 15 minutes before you cut into it, because it gets very juicy, (at least my version did!) I think it would be great to garnish this with avocado and a lime wedge."

Whole Wheat Waffles with Honey-Peanut Butter Syrup
"Made this today in honor of my father. Happy Father's Day, Dad! I used the recipe exactly except no peanut butter syrup. I made my own buttermilk by adding 1 Tblspoon lemon juice per cup, stirring it, and letting it stand for 5 minutes. So yummy, quick, and easy. It was my first time making waffles from scratch and the first time using my new Cuisinart waffle maker!!! It was wonderful!"

"I looked at b/c I was tired of my own used-up recipes. I made many changes and the quiche idea was interesting. Used: 3/4c fat free milk, 1 sliced green onion, 4 eggs, 1 cup of green giant steam crisp southwestern style corn(mix of corn, black beans, n red bell peppers) thouroughly drained of moisture, 1 1/4 cups of colby jack cheese(reserved 1/4 for topping off quiche before baking), and par baked a crust with finely diced red bell peppers in it. Taking it to cheer a friend who lost someone dear to her."

Cereal Apple-Cran Muffins
Rating:
I made a double batch of these muffins. Gave them to friends and coworkers. Huge hit with them. I made a few minor changes: used Smart Start cereal, unsweetened applesauce, (then added 2 extra teaspoons of brown sugar), dark brown sugar, and I used red sugar on top, (the kind you decorate with). I'd definately make them again.:)

Creamy Chocolate Frosting

I frosted my "giant" cupcake with this smooth frosting. I needed only 1/2 the recipe and I used buttermilk for extra creaminess. What a hit! I will be using it again.

Pumpkin Bread Pudding

I'm about to bake this, so I looked over the reviews. So funny that I was gonna use the cinnamon bread and decided to leave out the currants. Also use light eggnog and a bit less sugar.

Turkey and Bean Tostadas
Rating:
I made these turkey tostadas my way. Got ground turkey, browned it, added green onion and 1 Tblspn Pampered Chef "southwest seasoning" with 1/2 c water and simmered: added chili beans. Made in morning then refrigerated. This evening I heated bean-meat mixture, cut more green onion, tomatoes, grated cheese. (I also bought tostada shells at the market.) We topped them with shredded lettuce, sour cream, sliced olives and salsa. It got rave reviews. My friend's daughter (mother of a newborn) ate and had seconds! So did everyone else, including me! Will certainly make again

Red Velvet Whoopie Pies

Tried these last weekend at a ladies tea at my cousin's church event. Soo yummy. I came home and looked and there they were on your website. Thank you Betty Crocker!!
