Overnight Tex-Mex Egg Bake
So easy and very tasty! Instead of regular sausage, and being from the Southwest (Arizona), I used chorizo sausage instead. This added a whole different level of spicy and was fantastic!

Hot and Spicy Chorizo Chili
Don't knock it until you've tried it...or, don't review it until you've cooked it! This was good...REALLY good. I can't get 'smoked' chorizo sausage so used 'bulk' chorizo and cooked it up first, draining the grease out several times. It was spicy good...on the verge of too spicy for our taste but serving it with a little sour cream helps cool the fire. The mix of spices made this one of the most flavorful chilis ever, and using chorizo rather than ground beef kicked it up another notch to SUPERB.

Slow-Cooker Chive-and-Onion Creamed Corn
Wow, BEST side dish ever! I loved that it could be done in the slow cooker so the rush as the turkey comes out of the oven and you're trying to get everything else ready and on the table on time -- it just doesn't matter for this. Easy, easy, easy, and SO good. EVERYONE loved it, great flavor and 'impressive' to guests (who didn't need to know just how easy it was to prepare!). Another winner from Betty!

Slow-Cooker Sweet Potatoes with Applesauce
Really easy and delicious. I am not a big sweet potato fan but loved these. They cooked perfectly fine and did not turn to mush, and I followed the cooking times as written in the recipe. So nice to have a dish 'cook itself' which leaves lots of time for everything else going on in the kitchen on a holiday!

Premium Tres Leches Cake
Really one of the BEST cake recipes I''ve run across! I took hints from some of the other posters here and first, beat the mix for longer than two minutes (about 5 minutes total). Then, I substituted 1/4 cup of the water in the mix with 1/4 cup rum, and also substituted 1/4 cup of the milk in the ''tres leches'' portion with 1/4 cup rum. Together, these gave it a wonderful taste without overpowering it (plus, it was for a work potluck and too much alcohol would not be good!). I let it soak overnight and it was not at all soggy. This is going to become a family favorite!
