"I'm impressed with these simple little chicken cakes. Instead of 8 patties I made 4 larger ones since it's only my husband and I. I followed this recipe exactly as stated and I didn't have any issues with them tasting dry or falling apart. I could actually only eat one so I am taking the other one to work tomorrow for lunch. I'll see how they hold up as leftovers. "

"This was so much easier than I expected and it turned out exactly like the picture. I added cinnamon to the pancake batter and used one large gala apple for the apple topping. It was great. I added two slices of bacon as a side and it was perfect. It's a little much for only two people but it doesn't seem to store well. It was amazingly easy. "

"I make this ALL the time! I make it for Easter with different fruit toppings (blueberries, blackberries, raspberries, strawberries, kiwi) and top with toasted walnuts. I make it for the 4th of July or Memorial Day and use strawberries and blueberries. I've even made it on Halloween using blackberries and peaches. It's always fantastic and always a hit. Can't go wrong!"

I have made this at least 50 times and I have never received a single complaint. Sometimes I add a tsp of light brown sugar but it's fantastic with or without it.
