Sweet Potato-Caramel Twist Coffee Cake I'm in 4-H, and this recipe got me Reserve Champion (aka 2nd place!) at state fair, after I got Champion at county fair! It is sooo excellent, you just have to be careful to count how many you eat! Flipping the pan just right takes a little practice to keep any from running off the side, but it is definately worth it! I also used dark corn syrup instead of light, which gave it a much richer flavor. And sweet potatoes are really very nutritious, and take away the need for using as much sugar.
