I substituted the couscous with quinoa to make it gluten free, and it also added some extra protein to the salad. This is a great vegetarian meal!

Gluten-Free Apple Crisp
I used the regular-gluten recipe, but substituted the wheat flour for almond flour 1:1. I like it better than the original recipe!

I substituted the wheat flour for almond flour 1:1. The almond flour gave the topping a deeper depth and fuller round flavor that complimented the apples quite well. I also made the crust 1 1/2, since that part is my family's favorite.
