Fish and Collard Greens
"This recipe is amazing! DELISH! I used Tilapia as well. I added 4 cloves of garlic thinly slivered, 1/2 Large Orange Bell Pepper julienned 1 One lb bag of cut and clean collards and 1 whole Large yellow onion thinly slivered (vs 2 Medium)...I added about 1 tsp of red pepper flakes (will put more next time) and just followed all instructions to cook. The orange bell added great color and flavor, the red pepper flakes kicked it up a little bit and the garlic...well I just have to put in fresh garlic to pretty much everything. I am stunned at how tasty this is and how quickly it cooks up. The nutrients in this dish are very high as well. Oh, I had my fish weighed out already so I only used 11oz vs the whole pound. But with all the collards and the few extra fresh veggies I added, this easily clears 4 servings. With 4 servings...this dish came out to only 5 points for Weight Watchers...yuummmmy!"

This filled it out more and added a bit more flavor. Last night we ate it with the potato and today the little bit that was left over is over a serving of quinoa cooked with 1 bullion cube and minced dried onion...DEEEELISH! This was a big hit in our house and one to make again! I love it because its fast, easy and satisfying. We're on Weight Watchers to the additions I made, added no points! I'd add more red pepper flakes next time and maybe a few more veggies!! Yumm!"

Easy Baked Chicken and Potato Dinner for Two

I'd recommend bone in white meat if you're going to use it or dark meat because it takes a long time for the potatoes to cook even if diced pretty tiny ( 1/2 - 1 inch). I had to take the chicken out, put the potatoes back in for about another 30 minutes to cook ...and what I should have done is put the chicken in another dish, turn it over so it could brown and put it back in with the potatoes. This recipe looks great, and with my modifications the flavor for me was spot on..but getting the chicken to brown and getting this to cook evenly requires more than the recipe tells you. Next time I will use skinless bone in thighs...I'll cook them to brown on top, then turn them to brown the other side all while still in the same pot. The flavor drippings from the chicken in this dish will help the potatoes( veggies). My veggies were orange bell pepper, onion red and white, potato red and white, carrots and garlic. I'll try it again...now that I know what to do!"

Cereal Apple-Cran Muffins
"I love this recipe. I use a different higher fiber cereal that as you get toward the end of the box, it gets too finely ground up to eat in a cereal bowl...so we just hold onto it and I make these muffins. I used cinnamon apple sauce, omitted the sugar on top...but pretty much followed the recipe as is...and these are perfect to add to your morning commute with coffee! I might even crush up a banana in my next batch to use it up and add a little more flavor and fiber!"

Easy Mushroom Pizza Pie

The flavor on this was great. I agree with the other reviewer..it was more quiche like than pizza like...I used fresh mushrooms and can now see how they might have contributed to making it soggy after it sat in the frig. I don't know that I'd make this again, but if I did..I would actually use the canned mushrooms to cut down on the amount of liquid the veggies give off. I also sauteed onion, garlic and julienne zucchini too to use on the pizza...the flavor was the best! Just wasn't thrilled about the consistency of the 'crust'.

Blueberry-Banana-Oat Bread

This bread is delicious! I lowered the bisquick a bit and raised the oats equally so I could raise the fiber and bring the point value down (Weight Watchers). I used egg beaters vs. eggs and this came out beautifully! I appreciate the very important tip to let the frozen blueberries thaw out on paper towel for a while before you use them. It made a huge difference in the bread's ability to hold up in the frig without getting soggy. Love it! Will make again!

Slow Cooker Salsa Chili

This recipe is delish! I made slight modifications and it came out perfectly! I had about 7oz of turkey kielbasa in the fridge, so that went in with the ground beef. I had about 1/2 stick of zucchini so I diced that up finely and tossed it in. I like more beans so I added a can of great northern beans. I cooked on high for 1 hour and low for 3 and it was fine. I added the drained/rinsed beans at hour 3 along with a 1/2 can of water for get the consistency I wanted. The salsa in this really makes the flavor amazing! I served with a slice lime wedge, 1/8 avocado slice, tsp of light sour cream and some cheese! It was wonderful!!...and easy!
