Impossibly Easy BLT Pie
This was great! A huge hit for my family. We did healthify it a bit by using turkey bacon and we swapped out the mayonaise for mustard. I think it tasted better with the mustard. Gave it a real kick. I also used a pepperjack/cheddar cheese blend instead of swiss and instead of putting this and the bacon on the bottom I put the breading on the bottom and put the others on top. That way the bacon and cheese kind of sunk into the mixture but not too much. A couple of other variations we did: I cooked the pie for 15 minutes then I took it out to add the tomato slices and some mushrooms we happened to have on hand (I wanted to use them before they went bad). Then I let it finish cooking. That way the tomatos were juicy and warm. I topped it off with the shredded lettuce! We have just enough for a left over lunch today!
