Made this yesterday. Oh my, it is wonderful. So so moist and flavorful. I did however read comments first and actually used one of them; I cut up the apples instead of grating them. I also used half of the oil and substituted 4 ounces of apple sauce. I probably could have used all apple sauce for the oil, but this turned out so yummy I am glad I didn't.
I was also surprised at how pretty the loaf looked with the sugar-crusted top. This would make a really pretty gift. Just wrap in clear colored wrap with a red bow. Make the cranberries pop!! I will definately make this again.
