"I made this to serve at a breakfast for a high school water polo team. I omitted the vegetables and added half a container of salsa. It was delicious but the boys didn't scarf it down like they do with almost everything else. I think it was because the dish looked a bit unappealing due to a dark orange hue (caused by the salsa I guess) When I make it again, perhaps I'll try sprinkling some cheese on top to make it look more appetizing."
