Spinach and Tomato Frittata
"I hate it when people write reviews w/o trying something first, but this is just to answer the question below. It calls for GREEN onions, not regular onions. So yes, 5 green onions would equal about 1/3 cup."

Beef and Green Chile Enchiladas
"These were pretty good, but I felt like they were missing a little bit. I seasoned the beef with taco seasoning and put on extra sour cream once they were out of the oven. It could have been the fact that I used very lean meat though."

Banana Bread
"Yum, this is heavenly!! I forgot to add the nuts, but everything else was the same. I think I should have taken it out 10 minutes early, but it was still so good. Great warm with cool whip on top!"

Banana Bars
"I wasn't quite sure how I would like these because I'm not the biggest banana bread fan, but we had tons of bananas that were too ripe to eat so I decided I might as well and I am so glad I did. These are absolutely amazing! The banana flavor is not overwhelming like I thought it might be. They are totally moist and they taste really good even w/o the frosting. The frosting is very sweet, but I have a sweet tooth so it was perfect for me. My sister and I decided to each make a batch and see who's tasted better (I won of course) and my sister let the banana and sugar sit too long (about 15 mins.) and hers turned out more flat and not a consistent color (not that it matters if you use frosting) but they still tasted great!"

Southwestern Chicken Layered Salad
"This was so yummy! Definitely restaurant quality. We did black beans and olives and instead of dressing, we used low fat sour cream and sprinkled on some chili powder. Will def make again!"

Raspberry Streusel Bars
"YUMMY!! I used boysenberry jam and it was so good! I was having difficulties with the crust sticking to my fingers when I pressed it down so I used wax paper which really helped. My sister and I couldn't wait for it to cool. I actually think it's better warm. Next time I will make sure to have some vanilla ice cream on hand!"

Fiesta Chicken Pasta Salad
"This salad was pretty good, but I was expecting it to have more of a Mexican flavor (due to the 'Fiesta' in the title). It was good, but not extremely fantastic."

Impossibly Easy Cheeseburger Pie
"This was pretty good. I used taco seasoning and 2 cups of cheese. It still seemed like it was missing a little bit of something, but it was still good."
