"This is so delicious! I used all the low-sodium ingredients I could find and rinsed ro-tel in a strainer instead of salsa to cut down on more salt. The result was awesome. It's very good with a sprinkling of cheese and light sour cream. Great for an after work dinner party. It only takes 20 min to put together."

"This was delicious! My husband doesnt even like eggplant and he loved this. Make sure to broil on low or it will smoke!! :-) I also used italian breadcrumbs and made sauce from the tomatoes on our plant which made it good."

"I wasn't crazy about this one. The hashbrowns dissolved into a mush, so it's very thick. You will also need to add some spices for flavoring. I won't be making this again."

"This is so good! We loved it. I omitted the beef and used fresh spinach. I also left out the nutmeg. A great healthy dinner!"

"I had some carrots I needed to use up, and this was a good way to do it. I baked them in small loaf pans to give to people. I didnt use the frosting, and it made for a good snack/healthy dessert for work."
