Chicken Parmesan Tuscany
"I've made this twice - my husband was very skeptical of the ingredients first time around but he really likes the flavors in the soup. I skip the Bisquick step and just season the chicken (no salt seasonings since the soup has plenty of sodium!). I've made it with whole breasts and chicken tenders. Other than that, I haven't tried to mix it up more than that yet but I've made it twice in less than 2 months - we definitely like it and the more I make it I'm sure I will start experimenting."

Fiesta Taco Casserole
"My husband and I enjoyed this dinner. I only used S&P to season the beef, but with spicy chili beans and hot salsa the flavor in the dish was great. The tortilla chips at the bottom do get soggy - while I actually liked that, I don't think they add any flavor to the dish and they certainly don't help it nutritionally so I would skip them in the future. This is also a good lettuce wrap filling. The fresh tomatoes are a nice touch."

Beef and Green Chile Enchiladas
"My husband thought these were his favorite enchiladas I've ever made (mostly many different chicken or vegetarian recipes). I don't know about that but they were very good! I followed the recipe exactly (except for using sour lean, and reduced fat cheese). I made the pan and put it in the freezer; it's also so relaxing to know dinner's already taken care of one night! I wish they were a little spicier so I might tweak the recipe a tiny bit that direction for next time - but as is they are also a great family recipe as the rest of my family doesn't like spice as much as we do."

Peppermint Cream Brownie Torte
"This dessert looks pretty but isn't amazing. I didn't think the peppermint cream did anything to improve the brownies, but our house is all about plain brownies-no frosting. I don't think I'd make it again. It's not a difficult recipe but it used a lot of pans."

Parmesan Potatoes and Ham
"I liked the idea of this recipe but I made several changes. I used frozen mixed vegetables instead of O'Brien potatoes, but I made the topping more as mashed potatoes than potato-thickened sauce. I searched around and found a from-scratch replacement for the cooking sauce. I used 1 cup of Buds with about 2 cups of my homemade cooking sauce to get a flavorful mashed potato mixture, and poured an additional one cup of the sauce over my ham and vegetables. The dinner was good although not going on our favorites list. I would make it again, with the same ingredients although I think the sauce/potato ratio would need more tweaking. It was almost too flavorful!"

Pink Champagne Cupcakes
"I made these cupcakes for my birthday party. I bought a pink moscato by Barefoot Bubbly. I think the overall cupcake is very good, although next time I will probably cut back the sugar in the frosting. I just whipped all the ingredients at once - next time I will add the sugar in 1/2 cup at a time and stop when I like it. The frosting is just a little too sugary. Although at least one guest told me the frosting was the best part, for my personal taste, I would like less sugar."

Chocolate-Hazelnut-Pumpkin Tart
"This was easy to make and combines two really delicious things, pumpkin pie and "hazelnut spread with cocoa." These two delicious things together make a good pie, but not my favorite. I would not choose this pie to replace traditional pumpkin at Thanksgiving! But I would probably make it again."

Rosemary Roast Chicken
"This chicken came out moist and delicious. I guess I don't much care for acorn squash, I will pick a different squash or do potatoes next time, but the butter mixture is a keeper. There also seemed to be a lot of it, plenty to tuck in to all the nooks and crannies."

Roasted Cauliflower with Asiago and Orange
"I thought this was very good. I love asiago and I love cauliflower, and both worked well with the orange. A pretty easy side dish, too - get this started and in to the oven, and it's the perfect amount of time to work on a quick main course (we ate it with the Orange Zested Chicken Breasts)."

"Nice twist for chicken breasts. I served this with the Roasted Cauliflower with Asiago and Orange recipe from Betty - had to use up some oranges. We ate it with rice - also to use up - but I would recommend serving on a bed of spinach, maybe with some mandarin oranges (that's what we'll do next time!)."

Pumpkin Cookies with Browned Butter Frosting
"I made these last night but replaced the 1 cup of pumpkin with 1 cup of mashed banana (I had too many for the bread recipe I was using, the print-out of this recipe caught my eye). I also cut the white sugar down to 1/3 cup, thinking that mashed banana is sweeter than plain pumpkin. Everything else, including the frosting, is the same. I think it made a delicious twist on this cookie."

Potato-Topped Turkey and Green Bean Bake
""There are two kinds of people in this world" - those who like water chestnuts, and those who do not! SO I liked this a lot - my fiancé less so. And I do admit, something imparted a different taste, and it might have been the chestnuts. I would make this again, but skip the water chestnuts, and I would ignore the seasonings and amounts given in the ingredients and just do it myself to taste, with whatever strikes my fancy. I like the quantity of vegetables in this, I might replace the water chestnuts with sliced carrots. I did use an 8 oz package of fresh sliced mushrooms instead of the canned - I do not like mushrooms much at all but I find fresh to be far more appetizing. We did not have any sides with this as it has so much in it already!"

Mini Key Lime Cupcakes
"Delicious little bite. I did not use the full amount of powdered sugar for the green topping to keep it a little more tart (just under 1 cup). I did a home made cream cheese topping with key lime juice for the white frosting. I love that they are so little. Would use even less powdered sugar next time, so the tart key lime could come through even stronger."

Grilled Barbecued Beef and Bean Burgers
"I mashed the beans to try and hide them from my boyfriend, I thought that was a mistake but reading the other reviews it doesn't sound like unmashed is much better! The mashed beans made the texture very, very mushy, so I ended up dumping in the other 1/2 lb of beef and some extra cracker crumbs. I formed 7 patties. They were still pretty gooey, although they didn't crumble too badly. I would try them again, if I can figure out what else to tweak to get a better consistency, because the bean+beef flavor mix was very good. And the consistency, cooked, was fine."

"I thought this was yummy. The store was out of the small cans so I bought a larger jar of mushrooms, extra veggies are always good; and added quite a bit extra chicken broth. Just kept cooking it and adding it. Was yummy with a little rice."

Fudgy Truffle Eggs
"Made these for the second year, they continue to be a huge hit. I think the only downside is they are a little big, can be rich but great to share! I experimented with fillings this year. I did 1/3 with peanut butter as in the recipe, but another 1/3 with Nutella (about the same amount as the peanut butter) and the last 1/3 with caramel. Used a little more than the filling measurement given. Short on time, I just drizzled some yellow candy melts over the top to decorate. I recently made another BC truffle recipe that was really just a cake ball with another name. I much prefer these. They are a little bit tedious what with smooshing them out and wrapping up the filling, but it is not too bad, and worth it. And they make enough that you can pick out the best, eggiest looking ones to present."
