Beefy Nacho Soup
"I made this with diced chicken instead of ground beef. Used half chicken broth, half milk. Also added the corn. SO GOOD AND EASY! Next time will add cumin. Perfect for chilly evening."

Super-Tuscan White Bean Soup
"So good! And easy. Made this for dinner tonight and it was a hit. We don't have a food processor, so I used my hand immersion blender and it worked great. The basil topping really made it. We served it with garlic bread sticks and it was gooooooood!"

Espinoso Pollo Chili
"I found cactus in a jar in the Mexican section of our local grocery store. (I live in a small town in North Carolina... there's no Mexican grocery store here.) I made the chili tonight and it was terrific. More soupy than typical chili but it had wonderful flavor. I will be making this a lot this winter! Yum. (And thanks for the advice from other posters!)"

Black Bean and Salsa Noodle Soup
"This is WONDERFUL! I added diced chicken and used chicken broth, but other than that, I followed the recipe as written. It had so much flavor! I know I'll be making this a lot this winter. My husband loved it too! "

Tortellini, Bean and Pesto Soup
"This soup is terrific! As per other reviewers, I made some changes. I used chicken broth, skipped the kidney beans and used corn instead, doubled the carrots and celery and cooked the tortellini separately. I also added chicken to make it heartier. You wouldn't think the pesto would be good in soup, but the pesto and the parm are the keys to making this a standout soup. I will keep this is my favorites. Thanks to the other reviewers for the suggestions!"

Chili-Mac Soup
"This soup is very good. My only issue is I'm having a difficult time finding the correct Hamburger Helper. I made this several times last year, but this year, can't find the chili mac HH. I tried to make it using a chili seasoning pkg and elbow mac. But that doesn't work. You REALLY need to use the Hamburger Helper. When you use the Chili Mac HH, use Chicken broth 'stead of water, cubed chicken 'stead of ground beef and it's delicious. And even better the next day!"

Cheesy Lasagna Soup
"This was super tasty and very easy. Perfect for a chilly November day. I made a few changes... used ground chicken instead of beef, used chicken broth instead of water, skipped the green peppers and used parm instead of mozzarella. It was a bit thick so I added more chicken broth to make it more soup-like. All in all, it was very good and a snap to make. Will make it again."

Crunchy Asian Pasta Salad
"Very good... and easy. Left out the oranges because I don't like 'em. Added grilled chicken. Perfect for a light summer meal. Will be making this again soon. "

Lemon-Chicken Rigatoni with Broccoli
"This recipe is one of our favorites. It's getting to the point where I make it once a week! I use only fresh broccoli and grill the chicken breasts (with added spices) instead of a store bought chicken. I always add a little extra broth and top it with lots of parm. cheese. It's always a big hit with my husband. And it's oh so easy."

Easy Pork Skillet
"Made this last night. It was very very good! I took other reviewers suggestions and used only one seasoning packet and chicken broth instead of water. I also seasoned the pork with garlic and other spices as I cooked it. My husband isn't a huge Asian food fan, but went back for seconds. Used what fresh veggies I had on hand: Mushrooms, brocolli, onions & snow peas. Will make again for sure. Next time will try chicken! (Also, only had Chicken Ramen noodles on hand and they worked fine with the pork.)"

Mou Shu Chicken
"The filling was VERY good and very easy to make. But the pancakes were kind of messy to make and they didn't have a lot of taste. We ended up sprinkling the rolled bundle with soy sauce. Overall, the recipe was pretty good. For leftovers, I just heated the filling and added chow mein noodles, skipping the pancakes all together."

Chili-Mac Soup
"This soup is GREAT! I made a few changes... 5 c. chicken broth instead of water, cooked cubed chicken instead of ground beef, and one can of diced fire roasted tomatoes instead of 2 cups. It was so so easy and as another reviewer said, even better the second day. Served with chips, cheese and avacado. A family favorite!"

Easy Vegetable Chow Mein
"Love this recipe when I'm craving Chinese. I make it all the time. But I add the chicken. I also only use fresh veggies (last night it was mushrooms, brocolli, onions and celery.) You have to cook the vegetables a little longer than 5 minutes... but it's so so good. A keeper!"

Beef Pasta and Mushroom Soup
"Was very good. Tried it with ground chicken instead of ground beef. Used beef/chicken broth 'stead of water and doubled the mushrooms. (All suggestions from other reviewers.) It was wonderful. Froze the leftovers and several weeks later it was as good as the first night!"

Crunchy Chicken Salad
"This is a GREAT Chinese Chicken Salad. I found it on the Betty Crocker site about six weeks ago and have made it at least six times. The only thing I've changed is I skip the sesame seeds. You don't really need 'em and it makes a mess. This is so so so so good."

Lumpy Pan Pizza
"I made this with several alterations. I used 8 regular biscuits and cut them in sixths. I also skipped the pepperoni, and instead used 3/4 pound of (cooked with spices added) ground chicken. I added mushrooms and other spices. I also added parm cheese in addition to the other cheese. I cooked it a little longer than called for to make sure the dough was cooked through. It was great!"
