Caramel Macchiato Thumbprints
"I am sooo in love with these cookies! I did make a few adjustments to the recipe. I used 3 teaspoons of instant coffee granules. I used an 11oz bag of caramels. I made the cookies into 1 inch balls. Mine only had to bake about 7 minutes. I love caramel so I put about 1-2 tsps on my cookies and I didn't think it was too sweet - maybe the extra coffee I put in balanced it better. The indentation raises while being bake so I tried 2 different methods and both worked: 1. Make the indentation before being baked and right after they come out of the oven. This creates a wider, flat cookie (like in the picture. OR 2. Bake the cookie in the ball shape and then make an indentation right after they come out of the oven. This creates more of a round cookie (like a tassie shape). I use the back of "cookie baller" (which is actually a coffee grinds scooper) to make the indentation."

Sugar-and-Spice Shortbread Sticks
"Very good! I suggest using the apple juice and not substituting it for milk. It gave it an extra flavor. I used 2 1/2 tbsps of apple juice in the glaze. I didn't have apple pie spice so I created some with the spices they suggested. I have a hard time rolling dough out so after the dough was mixed, I spread it onto wax paper, put another sheet of wax paper on top, rolled it flat, put it in the refrigerator for about 20 minutes, and then cut it into sticks. Worked perfectly! "

Oma’s German Chocolate Chip Cookies
"They didn't have oatmeal chocolate chip cookie mix at the store so I used the oatmeal cookie mix and added about 1 cup chocolate chips. I also made the cookies about half the size & sandwiched 2 of the cookies together with the frosting. "

Dulce de Leche Cookies
"The cookies are very light & go well with the sweet caramel apple dip. I toasted the coconut longer, about 15 minutes, and just crushed the coconut with the back of a spoon in the pan. "

Chocolate-Peanut Butter Cookie Treats
"These cookies were a bit messy to make but I didn't find it any messier than making puppy chow. I kind of painted the chocolate coating on the cookie individually with a spatula instead of mixing them in the bowl with it. I pulled the cookies out of the bag with tongs & gave them a few shakes before putting on the racks to set. They taste great!"
