Grilled Beef Fajita Packs
"We really didn't enjoy this recipe all that much. As much as we love to grill and have fajitas, we thought it would be great. Since it was packet cooked, the meat ended up getting steamed in liquid and not seared. There was no char and it tasted chewy like boiled beef. I think if we had just done the ingredients on the stovetop, they would have been fine."

Overnight Rotini Bake
"Everything you want in a make-ahead meal: hearty, comforting, delicious and easy to make. To simplify it even more, just add a jar of your favorite pasta sauce instead of the crushed tomatoes and healthify by using lean ground turkey instead of beef. Make it Thursday night and pop it into the oven for an easy no-cook Friday evening. "

Tastiest Turkey Meat Loaf
"This has become a weekday standby in my house. Using turkey instead of meat (and I love beef, but try to stay healthy) gives it a lighter, but still moist, texture. The herbs really give it a warm, deep and flavorful taste, which is offset nicely by the sweet ketchup glaze. I often make this on Fridays ahead of time, leave in the fridge all day (the herbs really soak in), and pop it in the oven that night. The house smells like the comfort of a warm, hearty meal on a cold and blustery day by the time it's done. "

Slow Cooker Chicken Marsala
"This was quick, easy and delicious, but I found the recipe called for too much corn starch. This may, however, be because I used broth instead of marsala wine. I served it over Rotini pasta and it was a big hit. "

Rosemary Pork Roast with Carrots
"This was a fairly low-maintenance recipe. The onions and carrots did come out more cooked than the recipe showed, but overall everything turned out exactly as expected. As another reviewer has stated, you may need to up the amount of seasoning. "

Chicken Italian
"A quick, easy and hearty meal. Using the pasta sauce in the recipe reminded me a bit eating Spaghetti-O's as a kid. Its also a very easy to recipe to dress up and add more flavor to. While not spectacular, its warm and filling and a good weekday standby. "

Slow Cooker Beef and Creamy Potato Casserole
"Perhaps I made this wrong (though I did follow directions exactly) but I found this to be flavorless slop. I even added rosemary, thyme, savory and allspice to give it a kind of earthy flavor after tasting it and that didn't help at all. I will not be making this again. "

Chicken BLT Taco Salad
"A quick and easy summer salad--especially if you cook the chicken ahead of time. It was also easy to healthify a little--I cut back on the avocado, used turkey bacon, and cooked the chicken in Pam (but did give it a quick coating in the bacon drippings left in the pan). It does not keep well, however, so be sure that most or all of it will be eaten when you serve it. "

Grilled Honey-Mustard Chicken Sandwiches
"This was a quick and easy way to spice up some grilled chicken. I mixed up the sauce and sliced the tomatoes in the morning and we grilled the sandwiches that night. Its a great way to use up the mustard that's been sitting in the fridge and have a filling, no-hassle dinner. It will definitely be a summer staple in our house. "

Creamy Pesto-Chicken Casserole
"A great casserole that's easy to make and delicious. Any kind of pasta will do, so I use the bow tie that I buy in bulk on the cheap and just use diced chicken that I cook earlier in the week. Also, to mitigate the alfredo sauce (even the low-fat version is risky if you're trying to lose weight), I use non-fat Land O'Lakes half and half instead of milk. It adds to the creaminess but lowers the fat. "

Pork Chop and Green Bean Casserole
"A good, quick recipe that is a weeknight dinner staple in our house. The pork chops can be a tad dry, but I have found that layering them between the green bean casserole helps to alleviate that. Also, I use a standard green bean casserole recipe found on the back of the fried onions can and that works fine. "

Tomato-Basil Turkey Casserole
"I make this using bow tie pasta instead and, if I have it on hand, cubed chicken instead of turkey. All that tweaking done with, this is a quick and easy casserole that can be made in the morning, put in the fridge, and popped in the oven that night. The leftovers reheat well. The only complaint is that (and I suppose this could depend on the sauce one uses) it can be a bland. I generally will dress it up a bit with Italian seasoning mix and a touch of tarragon. "

Turkey Cucumber Dill Sandwiches
"This sandwich was light, refreshing and surprisingly filling (even though I put them on whole-grain sandwich thins rather than whole slices of bread). The cucumbers add a nice, cool crunch. I'm not sure if its because I used dried dill weed, but the dill flavor didn't really come through on the mayo for me. All the same, it was a perfect summer sandwich. I served it with my mom's German tomato salad (chopped tomatoes, sugar, red wine vinegar, salt and onions) as a side and a dill pickle. We can't wait until the weather cools off so we can have the same meal on of our picnics! "

Cold Gazpacho Soup
"A quick, easy dish that was perfect on a 113-degree afternoon. A word of warning, though: be careful about the garlic! I used two small cloves, thinking it wouldn't make all that much of a difference and boy, was I wrong! It had almost too much of a punch to it! Still though, we enjoyed it and I know it will be a dinner staple in August when the weather really turns up the heat. "

Slow Cooker Pork Chop Supper
"This is my fiancee's favorite pork chop meal, primarily because the pork chops come out so tender they don't even need to be cut with a knife. Its a warm, hearty dish that is perfect for a rainy or cold afternoon or even just a long day at work. I do find, however, that you need to cook the pork chops quite a bit (I use Pam cooking spray) before putting them in the crock pot to achieve that tenderness. Also, I make sure to spread all of the cream of mushroom soup directly onto to the pork chops, almost like a butter spread. I'm not a fan of peas, but don't mind them so much in this recipe. I, also, never use pimentos. "

Lazy-Day Overnight Lasagna
"Oh, I forgot to mention that I *do* use the light Italian sausage sometimes as well and that adds a nice, different flavor to the recipe. Not having to cook the noodles ahead of time means less time and fewer dishes, so that's another major plus on this recipe. "

Lazy-Day Overnight Lasagna
"This is my go-to recipe to ensure a perfectly lazy Sunday but still have a good dinner on the table. I usually make it Saturday morning and put it in the oven on Sunday evening. At first I thought that might mean it was in the fridge too long, but it has always turned out just fine. I do healthify it a tad by using ground turkey and whole grain lasagna noodles (sometimes; those lasagna noodles can be hard to find a tad pricey) as well as reduced-fat mozzarella and ricotta. In addition, the lasagna re-heats excellently and serves as a good, quick lunch. My fiancée will often take a square or two with him to school and I save one for my lunch break as well. "

Cinnamon Coffee Cake
"This was a quick, easy-to-bake coffee cake. The warm spice flavor really came through and reminded my fiancee and I of a crisp, autumn evening. The nutmeg lingered on the tongue and even added flavor to the following sip of coffee. The cake stayed moist on the counter for a good three days (but didn't last any longer). "

Make-Ahead Turkey Tetrazzini
"I love this recipe, although I never make it ahead of time. Also, I cube and cook up chicken from boneless, skinless breasts instead of buying a turkey meat and it still tastes just great! One time I used canned mushrooms instead of fresh and, although I'm not normally a food snob and am all about easy, I have to admit that there was a difference in taste (i.e., fresh mushroom really do make a better-tasting dish). "

Slow Cooker Layered Enchilada Dinner
"I made this for my fiancée and dad on Super Bowl Sunday and they loved it! It is definitely a stand-by recipe that we have had several times since. TIME SAVER TIP: I brown lean ground turkey and just add the cream of mushroom soup and a packet of taco seasoning (from a pouch) with half a can of water. It helps to add some kick to the meat without having to take the time to chop the onions. "
